We are all running the up hill rat race of working 40+ hours a week, keeping a clean house, getting dinner on the table that everyone in the house likes, making the kids happy, and getting your kids to all their after school activities and being the best cheerleaders. We get it! On top of all that, the laundry keeps piling and let me hear it for the laundry takes 30 minutes to wash, 1 hour to dry, and 7-10 business days to get put away. I wake up with my fiance’ at 5am, make him breakfast, then exercise. Hell no, I do not have it together. That is my ME time. We have also been matching socks one needed pair at a time out of laundry basket- we have all been there! So give yourself a break with this easy Warm Mexican Corn Salsa over turkey burger because you most likely have all these items needed to make this dinner right in your pantry and refrigerator, so make this and kick your feet up!

What you need…

  • A can of sweet corn (Absolutely, you can husk corn and remove it from the ear. It will just taste better)
  • Green Peppers or Poblano Peppers
  • Purple Onions
  • Tomatoes
  • Parsley
  • Turkey Burger
  • Cheddar Cheese
  • Garlic Powder
  • Onion Powder

Best news….. 30 minutes or LESS!

Empty the turkey burger into your stove top cooking pan and simmer, constantly stirring until brown. Stir in garlic and onion powder, salt and pepper for flavor.

In a small sauce pan, add 1 can of corn, peppers and onions and a little bit of butter to make it a little juicy. Simmer until the peppers and onions are a tender. Then add the tomatoes and a little bit of fresh parsley. If you do not have fresh just use the dried.

Melt cheddar cheese over the turkey burger, and top with Warm Mexican Corn Salsa.

Warm Mexican Corn Salsa

A warm Mexican Salsa can go with anything but over cheesy ground turkey will make for the easiest 30 minute or less dinner.

Ingredients

  • 1 Can Sweet Corn
  • Purple Onions
  • Green Pepper or Poblano
  • Tomatoes
  • Parsley
  • 1 Pound Ground Turkey
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 cup Cheddar Cheese

Instructions

  • Chop and Stir ground turkey into a hot stove top pan. 
  • Add garlic powder and onion powder and simmer and stir until browned thoroughly 
  • In a separate small cooking pot, combine strained can of corn, purple onion, and peppers. Simmer until tender which is about 5 minutes. 
  • Add tomatoes, parsley,and then cover until turkey burger is done. 
  • Cover turkey burger with cheddar cheese, then top with Warm Mexican Salsa
