Tomato Cucumber Salad is the greatest side salad to add to any meal! You can spice it up with a little red pepper flakes, just the right amount of Red Wine Vinegar and this dish will pack a kick and be the perfect Summer BBQ side dish.
We try to have a salad with every one of our meals because we know the importance of having ample vegetables in every day. It is March and we are setting our goals, motivating each other, and trying to remain on track with our healthy goals. I get it! We are all here working towards Summer season. I am for one working towards our wedding so I am #sweatingforthewedding. Part of eating healthy though, I believe is a well balanced diet. You need healthy fats, you need the sugar in fresh fruits, you need the carbs that can be found in grains and starches, but most importantly you must have your vegetables. If you are going to eat them, you might as well enjoy them!
If you are preparing this for a BBQ, I suggest using must more than I did to make this, maybe double or triple it. This batch was 3 servings. Enough for dinner, and enough for me to take some to work the next day.
You will need:
- Cherry Tomatoes
- Cucumber (I used the long seedless cucumbers)
- Small Purple Onion
- Mozzarella Pearls
- Red Pepper Flakes
- Red Wine Vinegar
Cut, spiralize, and slice your vegetables and combine in a medium mixing bowl with mozzarella pearls, red pepper flakes, and red wine vinegar.
Chill for 30 minutes before serving.
Tomato Cucumber Summer Salad
- 1 c Cherry Tomatoes
- 1 Cucumber I used the long seedless cucumbers
- 1/2 Small Purple Onion
- 1/2 c Mozzerella Pearls
- 1 tbsp Red Papper Flakes
- 1/2 C Red Wine Vinegar
- Cut cherry tomatoes in half
- Use a spiralizer the cucumber
- Slice onion
- Combine all ingredients in a mixing bowl and serve chilled
