Swiss Rolled Pork Loin

Tender swiss and spinach stuffed pork loin smothered in peppers and onions.

This stuffed pork loin has the perfect mix of flavors with swiss cheese, spinach, mustard then baked with peppers and onions until tender and juicy.

This easy but delicious recipe is simple enough for a work evening but also impressive enough to have the family over to enjoy for dinner night!

Cooking a Stuffed Pork Tenderloin 

  • If the layer of fat is thicker, it can be trimmed. Be sure to leave plenty of excess fat though because this will help keep it tender and juicy.
  • Carefully slice in sections to create a flattened tenderloin to layer swiss cheese and spinach to stuff.
  • Season with Salt and Pepper
  • Layer with mustard, swiss and spinach

Slicing a Full Pork Loin

  • Cut across the entire bottom of the pork loin about 2 inches in
  • Next cut, roll the pork loin over and do that same with a half inch thickness

Tightly roll the loin . A tight rolled loin will help maintain the moisture from the cheese and hold together better.

Bake on 400 for 15 minutes to brown it uncovered.

Lower to 350, add poblano peppers and onions, cover with foil, and cook until the internal temp is 145.

USDA Guidelines

  • USDA guidelines states that it is safe to consume pork at the internal temperature of 145 degrees Fahrenheit
  • Pork Temperatures
    • 145 to 150 degrees F. for Medium-Rare
    • 150 to 155 degrees F. for Medium
    • 155 to 160 degrees F. for Medium-Well
    • 160 degrees F. and up for Well-Done

Finishing your Pork Tenderloin

  • Remove the meat from the oven and leave covered with foil. Let your tenderloin rest for 5 to 10 minutes which will keep the temperature rising but will ensure a tender moist loin.

Ingredients

  • 1 Pork Tenderloin
  • Swiss Cheese
  • Spinach
  • Mustard
  • Minced Garlic
  • Onions
  • Poblano Peppers
  • Instant Meat Thermometer

Instructions

  • Slice and roll open Pork Tenderloin 
  • Season with Salt and Pepper 
  • Spread Mustard on instead of the pork loin 
  • Layer Spinach and Swiss Cheese 
  • Roll tightly 
  • Bake on 400 for 15 minutes to obtain a nice golden brown 
  • Turn heat to 350, add peppers, onions, and garlic, and cover and baked until temperature rises to at least 145 Fahrenheit. 
  • Once tenderloin reaches temperature, removed from oven, remain covered, and let rest for 5 -10 minutes 
  • Slice and Enjoy!
