Spiralized Cucumber Tomato Seasonal Salad is an easy but fancy salad to have on a weeknight. Minimal effort with lots of flavor!
Fresh garden vegetables are my favorite. If it’s Summer time, make sure you grab from there first! Because this spiraled salad is simple, minimal ingredients, and we can use garden vegetables so it’s budget friendly. So let’s simplify weeknight dinners together by adding this salad!
- Cherry Tomatoes
- Cucumber (I used the long seedless cucumbers)
- Small Purple Onion
- Mozzarella Pearls
- Red Pepper Flakes
- Red Wine Vinegar
If you are preparing Spiralized Cucumber Tomato Seasonal Salad for a BBQ, I suggest making a triple batch, depending on how many you are expecting. This seasonal salad bowl is 3 servings.
First, clean and spiralize the cucumber. I have a small handheld spiral tool and an attachment for my Kitchen Aid. If I am making this recipe for a whole party, I use my Kitchen Aid. This was for my husband and I, so I used my handheld spiralizer.
Second, slice cherry tomatoes into halves, and slice purple onion.
Third, combine all vegetables ingredients together, then add desired amount of mozzarella pearls. Add the cheese with your heart! We won’t judge here. Finally, add red wine and red pepper flakes. Red pepper flakes add spice to this salad bowl, so be sure to taste before over coating with red pepper flakes.
Chill Spiralized Cucumber Tomato Seasonal Salad for 30 minutes prior to serving. This step allows time for the red wine to soak into the vegetables and create a juice at the bottom of the bowl.
Leftovers for Lunch
Spiralized Cucumber Tomato Seasonal Salad is great for leftovers. I needed lunch the next day. I love this for any side dish at a BBQ or dinner but the real beauty is the leftovers. The additional day allows for even more juices to form.
I recommended eating the next day though before the ingredients becomes soggy.
Spiralized Cucumber Tomato Seasonal Salad
- 1 c Cherry Tomatoes
- 1 Cucumber I used the long seedless cucumbers
- 1/2 Small Purple Onion
- 1/2 c Mozzerella Pearls
- 1 tbsp Red Papper Flakes
- 1/2 C Red Wine Vinegar
- Cut cherry tomatoes in half
- Use a spiralizer the cucumber
- Slice onion
- Combine all ingredients in a mixing bowl and serve chilled
