Sheet pan dinners are effortless to make and delicious! The variations that can be made with these meals are endless. Rather you roast colorful bell peppers, onions, carrots, or green beans, any vegetable can be incorporated! This simple meal is tossed in olive oil and garlic for additional flavor and roasted to perfection in just 30 minutes!
An easy dinner is a treat in our home. We were surprised to learn that gnocchi doesn’t always have to be boiled to be delicious. Gnocchi is something that isn’t a weekly staple in our house, but the pillow soft potato balls are even delicious roasted! Adding these to the sheet pan dinner was the perfect combination with kielbasa and roasted vegetables!
I included an array of vegetables because our refrigerator was full and many needed to be used. I used baby carrots, green beans, broccoli, green peppers, and zucchini for our sheet pan. Start by removing the ends of the green beans, cutting the zucchini in 1/2 inch chunks, chopping the green peppers into chunks or slices, and breaking apart the broccoli. I used Whole Wheat Gnocchi and Turkey Kielbasa for this recipe. Add the gnocchi and sliced kielbasa into a large mixing bowl with the vegetables and add 2 tablespoons of minced garlic and drizzle with olive oil.
I also like to just combine everything on my sheet pan, drizzle with olive oil, then sprinkle the garlic across the top. This will minimize your dishes even more!
If you used a mixing bowl, spread across the sheet pan and place in the oven for 25-30 minutes on 400 degrees, or until veggies are tender and your gnocchi has a crispy outside. Zucchini does soften when it is cooked, so it will have more of a soft texture than the rest of the vegetables. Carrots do have a longer cook time than the broccoli and green beans as well. We like crunchy roasted carrots, so they were perfect for this recipe. However, if you do not like your roasted carrots crunchy, substitute them for a different vegetable like tomato chunks or purple onion chunks.

Sheet Pan Gnocchi and Kielbasa
- Turkey Kielbasa
- Whole Wheat Gnocchi
- Green Beans
- Green Peppers
- Olive Oil
- 2 tbsp Garlic
- Remove the ends of the green beans
- Break broccoli into pieces
- Chop Green Peppers into chunks
- Slice Zucchini into 1/2 slices
- Slice Turkey Kielbasa into 1/2 inch pieces
- Combine all vegetables, gnocchi, and turkey kielbasa into large mixing bowl and add 2 table spoons of minced garlic and drizzle with olive oil
- Roast on 400 degrees for 25-30 minutes or until gnocchi has a crispy outside and vegetables are tender.
