New Favorite—Protein Veggie Mix

Turkey Sausage (brand: butterball)

Zucchini (lightly sautéed)

Freah cut cherry tomatoes

Red Peppers

Green onions

Directions:

Cut tomatoes in half and toss with 2 Tbs of sherry vinegar, red pepper flakes to taste, salt, and pepper.

Slice Zucchini vertical, then cut into 1/2 chunks. Sauté lightly with olive oil in your favorite skillet. (Our personal favorite is our cast irons)  Sauté for 3-4 minutes with frequent turning.

Cut Turkey Sausage into 1/2 slices and sauté till perfectly brown. (I LOVE mine well done, hence the burnt pieces lol)

Dice red peppers and green onions and sauté together.

Plate It:

Mixed cut tomatoes and finishes zucchini together then top with fresh mozzarella pearls. Plate the turkey sausage when done to your desire.
