I absolutely love an easy meal after a long day of work. One of my other favorites is- breakfast for dinner? Who else loves breakfast for dinner?
One in particular is breakfast meats. I am not loyal to one single meat. You have breakfast ham, bacon, turkey bacon, turkey sausage, regular sausage, steak, and even scrapple. When you order breakfast at a restaurant, are you a creature of habit and order one specific breakfast meat no matter where you are? For me, it’s whatever the hell I am feeling that day! Hash browns or home fries? That’s a big debate in the breakfast world. I prefer perfectly browned home-fries with a little crisp.
Cooking home fries perfect is an art. Chop your potatoes into 1/2 inch chunks or you can slice them. I like options — so you choose your preference. Grease your pan with either butter or olive oil. Toss your potatoes into your pan and season with salt and pepper. Now, cooking home fries perfect means paying close attention and stirring frequently. This isn’t a turn on and walk away art. Sorry! If your pan becomes dry, add more butter or oil. You do not want to burn. Continuously toss until just about done, then add your peppers and onions… if that is what you prefer!
I chunked my ham into 1/2 cubes and added to the pan with the potatoes just before they finished to heat my ham thoroughly. I also added the spinach with the ham so it had a chance to cook down a little.
Just before you finish, heat up a separate pan and crack an egg. Lots of different ways to cook an egg, my preference is over easy so that is how I made this dinner. I’ll be honest, to every woman you need a good man and I am lucky enough so say Ryan can perfectly flip an over easy egg and rarely break the yoke. He definitely stepped in the kitchen to make this perfect egg pictured! You want to cook your egg on low heat and flip before your bottom yoke gets too done. You want to be able to see it “jiggle”
