Oriental Chicken and Noodles

When we are striving to be healthy individuals we want to avoid the high msg, the high sodium, that makes you feel so full. We are human beings though and we have a love for ethnic food. Ryan absolutely loves Chinese. It just doesn’t love me. I just had to find a way to make it in home to satisfy his love for it but leave us feeling energized and fulfilled.

This weight watcher approved recipe will fill your craving but leave your feeling full, comfortable and energized. It has all your vegetables you need plus your protein. Let’s get this cooking in your kitchen.

What you need….

  • 1 large chicken breast
  • Sesame Seed Oil
  • Low sodium soy sauce
  • Sugar
  • White vinegar
  • Lo-Mein Noodles or whole wheat spaghetti noodles
  • Sesame Seeds
  • Asparagus
  • Red Pepper
  • Green Pepper
  • Green Onions
  • Salt and pepper
  • Olive oil

Directions

Cut chicken into 1 inch chunks and simmer on low with salt and pepper and olive oil until fully cooked.

Simultaneously as chicken cooks, bring a pot of water to boil and add your lo-mein noodles. They take 10 minutes to fully cook. If using whole wheat spaghetti noodles they will take 6 minutes.

When noodles have 2 minutes left, add the vegetables to the boiling water. Leave green onions to the side. This will begin to tenderize your vegetables.

In a separate bowl mix….

  • 1/4 cup of soy sauce
  • 2 Tbsp of Sesame Seed Oil
  • 1 Tbsp of Sugar
  • 2 Tbsp of White Vinegar

When two minutes have passed, strain noodles and vegetables. Add the sauce mix and the chicken to the wok and let simmer for 5 minutes. This will finish tenderizing your vegetables.

Garnish with green onions and sesame seeds and enjoy!!!
