Looking for a simple side to wow your family at the dinner table, these mashed potatoes will do just that.
Growing up as a child anytime my mother didn’t whip the mashed potatoes long enough and had lumps, I complained. For some crazy reason, I would pick all the lumps out as if they weren’t just potato chunks like I eat home fries. Crazy right? Does any else have children like that? Here I am 26 years old and I actually prefer lumpy potatoes. Who have I become! I also prefer the skins left on my potatoes. I also used to sit there and pick out the brown pieces out like how dare my mother make a mistake pealing potatoes. I was one picky girl! How my mother survived me growing up, I wonder sometimes. My mother though is why I have a love for cooking. She had me sitting on the counter since I was a child making dinner with her and teaching me how to cook and bake. I cannot wait to do that with my own children someday.
Let’s get to these delicious potatoes now. All you need….
- 4 Potatoes (I use red but white or red doesn’t matter)
- 2 Tbsp of Sour Cream
- 1 Tbsp of Butter
- 1/4 cup Green Onions
- Salt & Pepper to taste.
If you noticed, I didn’t use milk in this recipe. It’s a different style of texture. These will be thick instead of creamy.
I used a hand potato masher to mash. Once you have the potatoes mashed to your preference, mix in the last 4 ingredients and then let your household enjoy.
They will not be disappointed!!
