Butter Garlic Zoodles and Meatballs is the perfect pasta alternative meal that can on the table in 40 minutes. This meal is quick and easy meal to make which is great when you are working parents.
In a typical week or month in our home, we rarely have pasta. It is something we honestly keep plenty of boxes in our cupboards of, however it is a meal both of us will pass on 90% of the time. If I am cooking with pasta, I am making a sausage ziti bake with lots of cheese and sauce. This falls into a category of cheat night and portion control.
I started making zoodles somewhere around last year. Oh the many failed attempts at making zoodles taste good. How long do I cook them? Do I want red sauce on them? Why are they so mushy?! It wasn’t until 6 months ago I heard a comment how to make zoodles good, you just pretty much want to warm them up. The light bulb effect took place in my mind and that is when I realized I was cooking zoodles all wrong. They are not brittle like spaghetti noodles with a longer cook time, they are simply a water based vegetable and too long of cook times is what was making mine mushy.
Now that I have learned the secret to making delicious zoodles, it is one of my favorite dishes I turn to. Another delicious creation with zucchini is my Vegetable Crust Pizza. This dough alternative crust is perfect to curb any pizza craving.
Making Garlic Butter Zoodles and Meatballs is a easy, little mess, and I consider it to be a quick dinner. You can have this on the table within 40 minutes. What is need for this recipe is, lean burger, onion, garlic, 1 egg, salt and pepper to taste. I am obsessed with spicy mustard so that is what I used as my sauce.
Combine your onions, garlic, egg, and meat together in a mixing bowl. Add your salt and pepper to taste. That is a measurement left out because many love lots of salt and pepper and some do not.
Mix the burger and ingredients together and form into 1 inch balls. The 1 inch balls are important to being able to have this meal on the table in under 40 minutes. The smaller the meat balls the less cook time.
Cover the meatballs and cook for 30 minutes. When the meatballs have 5 minutes left, this is when to want to start the zoodles. The cook time is minimal, however, they will have that noodle texture if cooked less.
Remove the meatballs from the oven and finish preparing dinner by combining the butter garlic zoodles with these delicious onion loaded flavorful meatballs. ENJOY!
Garlic Butter Zoodles and Meatballs
- 1 lb Lean Burger
- 2 tsp Minced Garlic
- 1/4 c Onion
- 1 Egg
- 1 Medium Zucchini
- 1 tbsp Butter
- In a large mixing bowl combine lean burger, 1 tsp of minced garlic, onion, and egg together and mix well.
- Form into 1 inch balls and place in a baking pan drizzled with olive oil and bake on 350 degrees for 30 minutes.
- In medium mixing bowl, spiralize 1 medium zucchini.
- On the stove, place 1 tbsp of butter and 1 tsp of minced garlic in well heated pan then add the zoodles.
- Stir consistently for 2-4 minutes to ensure they are fully heated.
- Remove zoodles from heat and meatballs from oven and serve.
