The perfect bite size snack that is filled with nuts and pomegranate seeds to give you nutrients while curbing the sweet tooth. Make these sweet bites in 10 minutes!

Ingredients

  • Dark Chocolate
  • Pecans
  • Pomegranate Seeds
First, melt the dark chocolate in the microwave or over a double boiler. I prefer the double boiler so I can stir constantly to ensure the bottom doesn’t burn.  If you are using the microwave, be sure to heat in 25 second increments, stir well, then reheat if necessary.
The chocolate needs to be warm and a little runny but too much. If the chocolate seems too runny, let cool for a little and it will thicken some. While the chocolate is cooling, take this time to put the liners in your muffin pan.
Once the chocolate has cooled to the perfect consistency, stir in about half of the nuts and pomegranate seeds into the melted chocolate and then portion about 1/2 Tablespoon into each liner.
Lastly, sprinkle pomegranate seeds and pecans on chocolate on to top of each tin and press down gently to set.
How to make these delightful sweet clusters
Lastly, let Dark Chocolate Pomegranate Clusters cool for 1 hour prior to removing from tin to enjoy!
Tip: When cooled, placed in a covered container and store on counter instead of refrigerator. The refrigerator slightly dries out the pomegranate seeds.

Ingredients

  • 1 cup Dark Chocolate or Almond Bark
  • 1/2 cup Walnuts or Pecans chopped or crumbled by hand
  • 1/2 cup Pomegranate Seeds

Instructions

  • Melt the chocolate or almond bark in the microwave or over a double boiler.
  • For the microwave, heat in 25 second increments, stir well, then reheat as necessary.
  • Let the chocolate cool a bit as you place your small cupcake liners in your mini muffin tin.
  • We found the best results were to stir in a bit of the pecans and pomegranate seeds, and then sprinkle some on top.
  • Stir in about half of the nuts and pomegranate seeds into the melted chocolate and then portion about 1/2 Tablespoon into each liner.
  • Top each with the remaining mix-ins and then press down gently to set.
  • Let the chocolate set for 1 hour before popping out of the tin and serving.
  • While this chocolate can be refrigerated to set, I found that it slightly dried out the pomegranate seeds. (Covering the container will cause the chocolate to sweat.)

Notes

Tip: add in pumpkin seeds, cacao nibs, or any another favorite healthy mix-ins.
