Dark Chocolate Pomegranate Bites

Are you looking for a sweet treat for your Valentines Day? These are perfect bite size treats!
Dark Chocolate Bites are the perfect way to treat yourself without the guilt. These little bite size treats are filled with nuts and pomegranate seeds to give you nutrients while curbing the sweet tooth! These bites from heaven are a quick recipe that takes 10 minutes and you can grab them on the go.
The best part, is you can make these with little as 3 ingredients, how ever this recipe can be tweaked to fit your liking. If you are not a fan of pecans or walnuts, what about pistachios or almonds.
All you need is: 
dark chocolate or almond bark
walnuts or pecans
pomegranate seeds
Melt the chocolate or almond bark in the microwave or over a double boiler. I prefer the double boiler so I can stir constantly to ensure the bottom doesn’t burn, however if you are using the microwave, be sure to heat in 25 second increments, stir well, then reheat if necessary.
The chocolate needs to be warm and a little runny but too much. If the chocolate seems too runny, let cool for a little and it will thicken some. While your chocolate is cooling, take this time to put the liners in your muffin pan. I found the best results were to stir in a bit of the pecans and pomegranate seeds, and then sprinkle some on top.

Stir in about half of the nuts and pomegranate seeds into the melted chocolate and then portion about 1/2 Tablespoon into each liner.
Top each with the remaining mix-ins and then press down gently to set.
Let the chocolate set for 1 hour before popping out of the tin and serving.

My favorite thing about these bites is you are not limited! The beauty of chocolate is that it tastes good with many foods. Therefore, feel free to add pumpkin seeds, cacao nibs, or any other healthy mix in you would like!
While this chocolate can be refrigerated to set, I found that it slightly dried out the pomegranate seeds.  My advice would be to keep these on the counter so you may enjoy them. I also found that covering the container will cause the chocolate to sweat! Enjoy fresh and make for many social gatherings or treats to come!
Dark Chocolate is so versatile but it pairs perfectly with nuts and dried fruits and seeds! These are the perfect example.

  • Top each with the remaining mix-ins and then press down gently to set.

Notes

Tip: add in pumpkin seeds, cacao nibs, or any another favorite healthy mix-ins.
