Creamy Tortellini Tomato Soup with Turkey Sausage & Spinach

Creamy Tortellini Tomato Soup with Turkey Sausage and Spinach is the perfect one pot dinner to enjoy while on a budget.  You can simply prepare this meal in 30 minutes or less for those busy evening with sports and games. It is also great for meal prep.

Soup is one of my favorite meals to eat on a cool evening. Growing up on grilled cheese and tomato soup may be arguably one of the best child hood meals.  Honestly, you shouldn’t be above adding a grilled cheese to this meal, if you need some extra carbs, cheesy goodness, and a treat. This recipe is so easy to make to pair with any of your favorite sandwiches that makes for an easy meal night.

 

I used Campbell’s tomato soup to make this recipe and honestly, it’s part of what makes this recipe easy.  What you need to put together this easy dinner is Campbell’s tomato soup, basil, garlic, onion, chicken stock, milk, tortellini, turkey sausage, spinach, and Parmesan cheese.  This can easily be made into a one pot dinner by sauteing the turkey sausage and spinach together first before adding the soup ingredients.

If you are making this a one pot recipe which I highly suggest, add the turkey sausage and spinach with 2 tablespoons of oil to your soup pot heat for about 5 minutes, stirring consistently. This should be done to cook your spinach down and brown your sausage. If you are using turkey sausage or keilbosa it will already be pre-cooked. If you are using ground sausage or hamburger, you will want to extend your time for your meat to be thoroughly cooked.

Once the spinach and meat is ready, add the basil, minced garlic, onion, tomato soup, chicken stock, and milk. Stir continuously till brought to a boil. Add the tortellini into the soup pot and cook until tender. Top with Parmesan cheese to enjoy.

Creamy Tortellini Tomato Soup with Turkey Sausage and Spinach is absolutely delicious with the turkey sausage but some have allergies to turkey or may not be a fan. Some absolutely delicious substitutes are: ground pork sausage as lean as possible, ground hot sausage if you like spice, or ground burger of course as lean as possible. These are all great substitutes but don’t shy away from extras as well. Vegetables are always amazing to add so feel free to add some broccoli or stewed tomatoes to make it more chunky.

Ingredients

  • 1 tbsp Basil
  • 1 tbsp Minced Garlic
  • 1 small onion
  • 2 cans Tomato Soup (10.75 ounces)
  • 1 1/4 cup Chicken Stock
  • 1 cup milk
  • 2 cups Torttelli
  • 1 package Turkey Sausage
  • 2 cups Spinach (cooked)
  • 1/2 cup Parmesan Cheese

Instructions

  • Combine first 6 ingredients in soup pan and simmer until onions are tender
  • In a separate pan cook turkey sausage and spinach together. Turkey Sausage is typically pre-cooked so light brown then add the spinach 
  • While the sausage and spinach cook, add the Tortellini to the soup pot and cook for 12-15 minutes till tortellini is tender. 
  • Add the sausage to the soup bowl and stir in the Parmesan cheese to finish
