My momma’s coleslaw has always been my favorite. Therefore my Classic Rich and Creamy Coleslaw with Added Vegetables is just like my momma’s with extra fresh vegetables!
I loved putting the carrots and the cabbage into the food processor when I was a kid. I always said, mom we need more this is not enough because I loved stuffing it down the hatch of the processor. However, my approached to this Classic Rich and Creamy Coleslaw was chopping with a knife. I prefer the chunky slaw. However, you can chop, shred, or food process your vegetables any way you wish!
- Pre-Made Coleslaw Vegetable Bag (or head of cabbage)
- Olive Oil Mayonnaise
- White Vinegar
First, chop broccoli, cauliflower, and carrots. Second, combined all chopped vegetables with the coleslaw medley bag. For the purpose of an easy weeknight dinner side, I love the bagged coleslaw medley. Third, measure 1 cup of mayonnaise, 1/4 cup of white vinegar, and 1 /4 cup of sugar. Stir contents thoroughly until all vegetables are coated.
You can easily adjust the recipe as needed. For example, if you are making this recipe for a larger group add more mayonnaise, vinegar, and sugar to coat all vegetables.
You can stir and serve. The flavor will be rich and decadent. However, if you chill for 30 minutes prior to serving, the coveted Classic Rich and Creamy Coleslaw with Added Vegetables side dish, it will be rich with a creamy texture.
What if I do not like broccolli or cauliflower? Think about what raw vegetable you do like? Will it taste good with this? Go ahead and add it!
Raw vegetables that can be added include: Celery, Bok Choy, Green Pepper, or even Cucumbers.

Classic Rich and Creamy Coleslaw with Added Vegetables
- 3 c Cabbage
- 1 c Broccoli
- 1 c Cauliflower
- 1/2 c Carrots
- 1 c Olive Oil Mayonnaise
- 1/4 c White Vinegar
- 1/4 c Sugar
- Salt & Pepper
- Chop all vegetables
- Mix all ingredients well together in a large mixing bowl.
