Cast Iron Turkey Burger Corn Salsa is an easy weeknight dinner on a budget. I dub this recipe as part of my budget friendly meals because it doesn’t require many ingredients or expensive ingredients. Also, Cast Iron Turkey Burger Corn Salsa makes is a hot dinner on the table in less than 30 minutes. That is always a win in my book!

A budget friendly meal should consist of a delicious yet healthy meat. This one we used ground turkey. Additionally, if it’s budget conscious it should be made with common fresh vegetables and/or common pantry items. Fresh parsley is a vegetable I used in this recipe, however dried parsley is a budget friendly substitution most have in their pantry.


  • A can of sweet corn (Absolutely, you can husk corn and remove it from the ear. It will just taste better)
  • Green Peppers or Poblano Peppers
  • Purple Onions
  • Tomatoes
  • Parsley
  • Turkey Burger
  • Cheddar Cheese
  • Garlic Powder
  • Onion Powder

How To….

First start with heating the cast iron pan. Turn on medium heat and drizzle with oil. Once heated, add the turkey burger. Chop and stir until completely cooked. This will be about 8 minutes. Flavor the turkey burger with garlic powder, onion powder, salt, and pepper.

Second, in a small sauce pan to create the corn salsa, add 1 can of sweet corn, chopped green peppers, diced onions, and 1 tablespoon of butter for juice. Simmer on low heat until the peppers and onions are a tender. Third, add the tomatoes and chopped fresh parsley. If you do not have fresh just use the dried. Stir until tomatoes are warm but not breaking down. Now you have a delicious warm corn salsa to top with! You could top many dishes with this salsa!

Lastly, to finish Cast Iron Turkey Burger Corn Salsa top the turkey burger with Cheddar cheese and corn salsa then enjoy! I love this easy dish! It’s warm, on my table in less than 30 minutes, and easy on my budget.

Leftovers for Lunch

I love a recipe that makes great leftovers! This is perfect! Layer your pyrex or meal prep container with turkey burger, then top with Corn Salsa. Both turkey burger and corn salsa will need heated which makes them great to put in one dish! Do not heat for more than 2 minutes the microwave! I suggest 1 minute and 30 seconds to have it perfectly warm, but not too hot to enjoy!

  • 1 Can Sweet Corn
  • Purple Onions
  • Green Pepper or Poblano
  • Tomatoes
  • Parsley
  • 1 Pound Ground Turkey
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 cup Cheddar Cheese


  • Chop and Stir ground turkey in a hot cast iron pan 
  • Add garlic powder and onion powder and simmer and stir until browned thoroughly 
  • In a separate small cooking pot, combine strained can of corn, purple onion, and peppers. Simmer until tender which is about 5 minutes. 
  • Add tomatoes, parsley,and then cover until turkey burger is done. 
  • Cover turkey burger with cheddar cheese, then top with Warm Corn Salsa
