Yum! I am obsessed with carrot cake but when you decide to eat carrot cake, you are deciding to have those calories as well. As for me, I chose to put all those delicious flavors of carrot cake into a healthy energy ball. So this sweet little treat is packed with everything you need to curb your craving and fuel you in the morning!
I was also a advid breakfast skipper. It was easier to drink my coffee, large cup of water, and wait until my 10 am snack I would either get out of the vending machine or the healthy snack fridge at work. This New Year brought a new way of thinking. I started experimenting with Energy Balls. The first batch I made and took 2 every morning for breakfast gave this realization of WOW breakfast is so nice to enjoy with my coffee. Then I made these carrot cake ones. I had to quickly roll these into balls and get them put away before I ate the entire bowl by the spoonful. Yes, you know what it’s like to eat raw cookie dough or cake batter from the bowl despite the FDA’s “recommendations”. Well guess what, these don’t have raw eggs so ENJOY, but make sure to save some for your mornings!
The recipe is simple, it’s all the items you most likely have hiding in your pantry and refrigerator. You will need, rolled oats, carrots, vanilla yogurt, milk, cinnamon, , chia seeds, ground flax raisins, and almond butter. If you do not have the ground flax or chia seeds no worries, you can still make this recipe. I add those for added nutrition.
Once you have all your ingredients together in your mixing bowl. Mix them all together.
Before you eat all this energy ball dough, get them made into 1 inch balls and put them in the refrigerator till you are ready to enjoy!
Carrot Cake Energy Balls
- 1 c Rolled Oats
- 1/2 c Carrots
- 1/2 tsp cinnamon
- 2 Tbsp Ground Flax Seed
- 1 Tbsp Chia Seeds
- 1/2 c Raisins
- 2 Tbsp Almond Butter
- 1/3 c Vanilla Yogurt
- Combine all ingredients together in a large mixing bowl, then roll into 1 inch balls. Store in refrigerator until ready to enjoy!
