Simple meatballs are legit one of my favorite meals to whip up quick. It’s not many dishes, it’s a simple meal to make just for me, and it’s an easy meal for lunch the next day. Saturday Ryan was working late and I just needed something easy for me, so I went to a fav quick meal of mine.
Protein Meatballs & Sautéed Zucchini
- 1 Pound of 93% Lean Burger
- 4 Tablespoons of Egg a White’s
- 1 tablespoon Garlic Powder
- 1 tablespoon Onion Powder
- Chopped Green Pepper (as much as you want)
- Salt & Pepper to taste.
Mix all ingredients together in bowl and then make balls into about 1 – 2 inch size
Bake for 20 Minutes
Chop Zucchini in to 1/2 inch pieces and sauté in pan with a drizzle of olive oil till slightly tender (mushy zucchini is not my fav)
Top meatballs with a spoonful of spaghetti sauce and a pinch of mozzarella cheese
